Turkey Lettuce Wraps

These lettuce wraps are the BEST and one of our family FAVES!!!

Ingredients:
1 lb ground turkey
4 cloves minced garlic
1 medium onion, diced
1/4 cup hoisin sauce
2 tbsp Bragg Liquid Aminos
1 tbsp red wine vinegar
2 tbsp grated ginger
1/2 tsp Sriracha (or more, to taste)
1 8-oz can of whole water chestnuts, drained and diced
2 green onions, thinly sliced
Sea salt and ground black pepper, to taste
1 head iceburg lettuce

Add ground turkey into a saucepan over medium-high heat and cook until browned, about 3-5 minutes. Be sure to crumble the turkey as it cooks. Drain any excess fat if necessary.

Stir in garlic, onion, hoisin sauce, Bragg Liquid Aminos, red wine vinegar, ginger and Sriracha. Stir until onions become translucent, about 2 minutes.

Stir in chestnuts and green onions. Stir until tender, about 2 more minutes.

Season with sea salt and pepper, to taste.

TO SERVE:
Spoon several spoonfuls of the turkey mixture into the center of the lettuce leaf and eat it taco-style!

Grilled Chicken Meal Prep!

Meal prepping is so important to stay on track while living a healthy lifestyle! Grilled Chicken is one of my GO-TOs! I always keep it on hand (I love cold grilled chicken) so I can add it to my salad or put in soups, etc...so many possibilities!

Chicken does NOT have to be boring! In fact, it can be super yummy if you cook it right! This is one of my favorite meal prep items and super yummy!

Whole-Wheat Banana Nut Bread


2-1/4 cup whole-wheat flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup stevia in the raw
1/2 cup chopped walnuts
4 ripe bananas, mashed
1/2 cup honey
1/4 cup plain yogurt
2 eggs
1/3 cup coconut oil
1 teaspoon vanilla

  • Preheat your oven to 350 degrees and grease and flour loaf pan.
  • Whisk together the flour, baking soda, salt, stevia in the raw. 
  • Stir in walnuts.
  • In a separate bowl, mix mashed bananas with the yogurt, honey, eggs, oil, and vanilla.
  • Fold the banana mixture into the flour mixture until blended. Do not overmix.
  • Pour batter into prepared pan.
  • Bake for 40-50 minutes or until toothpick comes out clean.
